Esta guía muestra los principales valores naturales e históricos que atesora el Desfiladero de los Gaitanes que, tras 40 años intransitable, puede volver a recorrerse a través de unas nuevas pasarelas superpuestas al deteriorado “Caminito del Rey”.

El magnífico patrimonio ecológico de la geología, los ríos, la flora y la fauna, no es menor que el legado histórico recibido desde la prehistoria hasta que el Desfiladero se convirtió, primero en un pasillo para que Málaga pudiese comunicarse con el resto de España por ferrocarril a mediados del siglo XIX y después, al convertir estos cañones en una extraordinaria industria hidroeléctrica de principios del siglo XX. Poder volver a estos espacios, ahora seguros, y con una información cualificada que los redescubre a la ciudadanía actual, es el objetivo de esta guía.

FIESTA DE LA MATANZA. Ardales (Guadalteba).

For more than a decade, the town of Ardales, located in the region of Guadalteba, pays homage to the traditional elaboration of pork sausages and meats with a day known as the Festival of the Slaughter. On this day women of the village recreate, with utensils from other times, the traditional methods of making sausages and slaughters.

Throughout the day, thousands of buttons, sausages filled with sausage, sausage or blood sausage, and the famous “ardalo” style stew, made with lean pork, pepper, tomato, onion and garlic, are served. Traditional recipe that is transmitted from generation to generation.

For two decades, the town of Ojen holds in November the “Fiesta del Toston” , a day in which tradition is to roast chestnuts with the preparation of compounds dishes for this fruit, as well as tasting products like raisins in brandy, honey, roasted bacon, rice with fennel or chestnut soup.

How to get there : If you start your trip in Málaga City, take the A–357 motorway, and go towards MA-444, through the Municipalities of Cártama, Pizarra, Carratraca, and Ardales. This route is 59.1 km long, and it takes 50 minutes by car. In Pizarra, you can also go to Álora by motorway, and then along A-343 to the train station El Chorro. This route is a little bit longer – 60 km, and you will take a little more than one hour to get to your destination. The road is narrower and curvier than the previous one.
